Is it just me, or does everyone's Mum have that one appetizer or dip recipe that just knocks it out of the park? My mum in law, Leona, makes a killer "Surprise Spread" with cream cheese, shrimp meat, green peppers, tomaotes and mozzarella.
My Mum's specialty was always Spinach Dip. She used to make it for baby showers, bridal showers, get together with neighbours - you name the occassion she made it. In fact she even made it for us this past Christmas Eve during our Game Night!
Next add in your sour cream and mayonaise. In the ingredients list you'll notice I wrote "real" mayonaise. That's because for some crazy reason, we Canadians use Miracle Whip more often thatn mayo for sandwhiches, etc etc. So I buy a small jar of low fat Hellmann's just for this dip! You can totally use low fat sour cream too.
Then add in your soup mix and fresh ground black pepper. Allow your spinach to thaw (duh) before attempting to add it in. You'll also want to drain it, or squeeze out as much water as possible. I squeeze it in paper towels, but inevitably some of the spinach sticks to the paper towel. Argh!
Gently stir in the spinach and you're done. Make sure to let this sit over night before serving. The flavours really meld and you will end up with an infinitely better dip!
To serve, hollow out your bread bowl and scoop the dip into the centre. Cut up the bread you removed from the centre into bite sized pieces and arrange around the bowl on a platter. Unfortunately I didn't get a picture of this final stage.....that's how fast this stuff get's eaten.
Be sure to try this for your next games night. You'll be the hostess with the most-est. Everybody loves a good spinach dip - and this one's great!

This is the best dip! I make it all the time for baby/bridal showers (You probably saw it at Leigh's!). I use the epicure spinach dip seasoning mix rather than the knorr one though, still yummy!
