Salt & Vinegar Chips

My cousin Sierra, aka CiCi, is one of my favourite people.  

She loves to FaceTime me (she only has a brother and boy cousins) so anytime she can chat about nail polish and makeup she does.  In our last FaceTime she was chowing down on some potato chips which really made me crave chip.  I told her about the potato chips I made in the microwave.  She asked me "How do you think you could make salt & vinegar chips?" And I thought about it, and told her I would try to figure it out.  So this post is for her.  Homemade salt and vinegar chips.  

I followed the steps for microwave potato chips with a few changes.  I sliced the potatoes on my mandolin and rinsed them with cold water.  This is essential for crispy chips.  Don't skip it.

Then I soaked the slices in vinegar.  For like 15-20 minutes.  While this gives them a great vinegar taste, the extra moisture means you're going to have to microwave them longer.  
Just remember that.

Place them on a plate lined with paper towel to absorb the moisture (this time I used a paper plate because my real plates got SO crazy hot). Generously salt them and pop 'em in the microwave for about 2 minutes.  Flip 'em and cook them again.  Continue until the potatoes reach the desired crispiness.

What a great idea! I'd been wondering lately how to make them using my dehydrator. Somewhere, I read that I needed to cook them for a bit before putting them on the drying racks, but I didn't know how to get the vinegar flavor in there. THANK YOU!
